How “Chinese” is America’s Chinese Food - A Historical Examination of Culinary Authenticity
The lecture will start with an effort to define the word “cuisine,” a fundamental term in discussions of culinary authenticity. Then it will discuss two basic features of Chinese food as a basis to understand the nature of America’s Chinese food as a unique diasporic Chinese cuisine invented in the United States.
