This was the last day in Irvine before I hit the road for China, visiting my parents for one month. I still had some food in storage. Then I felt like a somewhat complicated way of consuming a half potato, a floret of broccoli, two eggs, a little corn flour, a little milk, some sweet corns and sunflower seeds. And here are what I ended up with. Simple Broccoli Chowder: 1. Peel and dice the potato. Wrap in a bowl and microwave at high power for 3 mins.2. Mince the broccoli. 3. Mash the potato, add the broccoli in the bowl, wrap and microwave for another min. 4. Pour in milk and mix well. Egg Biscuit: 1. Beat the eggs in a bowl until smooth.2. Mix the corn flour, sunflower seeds, sweet corns and egg in a baking pan. Mix well. 3. Bake at 350F for about 25 mins. This "egg biscuit" is similar to "Tie-Bing", a corn-flour-based pastry popular in the north-eastern part of China (I might be wrong because I'm not from that area). It's meant to have a crunchy crust, and a somewhat chewy but soft middle part. |
